Muffins without butter

These muffins are delicious and very healthy.  It is a large batch and make more than 12 large muffin cases.   I often halve the recipe.

FRUITY MUFFINS


360g plain flour sifted
1 tspn bicarb soda
1 tspn baking powder
4 eggs
pinch salt
250g castor sugar
270-280mls fat free yoghurt (I use Jalna)
180mls vegetable oil (I use Grapeseed)
250g or up to 2 cups chopped fruit.
Use more fruit of you really like a fruity muffin.  I use fresh peaches, frozen berries (defrost, bring to room temp and make sure they have no excess moisiture or your liquid will be unbalanced) chopped banana, chopped apple.  In fact I use anything that's on hand and often mix more than one fruit.

Mix all together and spoon into muffin cases.  Bake for about 20-25 minutes (depending on oven and how wet you have made mixture)

Quick and Healthy Apple Cake

1.5 cups SR flour (sifted)
1 tspn cinnamon (or other favourite spice)
0.75 cups castor sugar
125ml Vegetable Oil (I use Grapeseed Oil)
3 x apples peeled and finely chopped.
2 eggs

Mix all ingredients together.  If the mixture is not wet enough add another drizzle of grapeseed oil.  If a little too wet, add a tiny bit more flour.  NB  The recipe is extremely forgiving!

Pour into a 20cm square tin.  I line mine with baking paper rather than greasing - it's easier.   Bake @ 180degrees for 40-45 mins.

NB  If you don't mind what goes into your arteries, substitute 125 gram melted butter for oil.
